Healthy Quinoa Salad Recipe

This salad is a tasteful, healthy way to use your favorite Vivian’s Live Again Creamy Soup Mix.

Course: Salad


  • 4 cups Quinoa cooked
  • 1 1/2 cups Water
  • 1/3 cup Vivian’s Live Again Creamy Chicken or Mushroom Soup Mix
  • 3/4 cup Mayonnaise
  • 1 tbs Vinegar
  • 1/4 tsp Curry Powder
  • 2-3 Med tomatoes chopped
  • 1 Large Bell Pepper chopped
  • 1/2 Med red onion chopped
  • 2 stalks celery chopped
  • Salt and Pepper to taste


  1. Whisk soup mix into water and bring to a boil in the microwave.
  2. Remove and stir, then bring to a boil again.
  3. Stir in mayonnaise, vinegar and curry.
  4. Allow to cool to room temperature before stirring in the quinoa and chopped vegetables.
  5. Salt and pepper to taste. Chill for 2-4 hours before serving.
