This salad is a tasteful, healthy way to use your favorite Vivian’s Live Again Creamy Soup Mix.

Ingredients
- 4 cups Quinoa cooked
- 1 1/2 cups Water
- 1/3 cup Vivian’s Live Again Creamy Chicken or Mushroom Soup Mix
- 3/4 cup Mayonnaise
- 1 tbs Vinegar
- 1/4 tsp Curry Powder
- 2-3 Med tomatoes chopped
- 1 Large Bell Pepper chopped
- 1/2 Med red onion chopped
- 2 stalks celery chopped
- Salt and Pepper to taste
Instructions
- Whisk soup mix into water and bring to a boil in the microwave.
- Remove and stir, then bring to a boil again.
- Stir in mayonnaise, vinegar and curry.
- Allow to cool to room temperature before stirring in the quinoa and chopped vegetables.
- Salt and pepper to taste. Chill for 2-4 hours before serving.
