Ingredients

<strong”>Dry Ingredients (mix separately)

  • 3 1/2 cups (462 g) Tree Street Grains 9-Grain Flour
  • 2 cups (233 g) ground flaxseed
  • 1 teaspoon cinnamon
  • 1 teaspoon mace
  • 2 1/2 teaspoons baking soda

Wet Ingredients

  • 1 1/2 cups (302 g) sugar
  • 1 cup (176 g) shortening
  • 1/2 cup molasses
  • 1 large egg
  • 1/4 cup milk of choice
  • 2 teaspoons vanilla extract

Variation: Omit spices and 1/4 cup flour.  Add 1/4 cup cocoa powder.  These have a wonderful rich flavor, but do not have a strong chocolate flavor.  These can also be made with traditional whole wheat flour or white flour.

Instructions

  1. Preheat oven to 375°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together all dry ingredients until evenly combined.
  3. In a large mixing bowl, cream sugar and shortening until light and fluffy.
  4. Add molasses, egg, milk, and vanilla. Mix until smooth and fully combined.
  5. Gradually add dry ingredients to the wet mixture, stirring until a soft dough forms. Dough should be the stiffness of sugar cookie dough.
  6. Scoop dough into 2-4 tablespoon portions (depending on desired cookie size)and place 2 inches apart on prepared baking sheets.
  7. Bake for about 10 minutes, until cookies are set with slightly firm edges.
  8. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Tips for Best Results

  • The dough will be slightly soft. If cookies spread completely flat the dough is too soft.  Add more flour.
  • For softer cookies, remove from oven slightly early.
  • Cookies will continue to firm up as they cool.
  • Store in an airtight container or freeze for longer storage.
