Gluten Free Apple Cinnamon Cookie Recipe

Soft gluten-free cookies with the mouth-watering flavor of oats, apples and whole grains.

Gluten Free Apple Cinnamon Cookie Recipe

1 1/4 C (177 g) Tree Street Grains 9 Grain Flour*
1 1/4 C (132 g) rolled oats
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt

1/2 C (113 g) butter, softened
3/4 C (160 g) packed brown sugar
1 large egg
2 tsp vanilla extract
1 C grated apples (no need to peel)
2 tsp lemon juice

*More flour may be required depending on how it is measured or the volume/moisture in apples.

Directions:

  1. Preheat oven to 350° F.  Line two baking sheets with parchment paper.
  2. Combine all dry ingredients in separate bowl.
  3. Place butter and brown sugar into a mixer bowl and cream together well using the cookie paddle.  Add egg and vanilla and cream again.
  4. Add apples and lemon juice and mix well.
  5. Add dry ingredients to the mixer and beat well.  Dough consistency should be thick, scoopable, and moist.
  6. Using cookie scoop or spoons, drop approx. 2 Tbsp at a time onto cookie sheet about 2 inches apart.
  7. Bake for 14-15 minutes until set.
  8. Remove from oven and let cool partially before removing from trays.

Notes:
In this recipe the spread of the cookie is most effected by the flour.  If the cookie spreads more than you like during baking, add a little more flour.

The batch makes two dozen cookies which freeze well.
