Soft Gluten-Free Sugar Cookies with Dairy-Free Pudding

Vegan Vanilla Vegan Pudding - Dairy, Soy & Gluten Free

Ingredients

  • 3/4 cup gluten free shortening
  • 1 cup sugar
  • 1 egg
  • 1/2 T vanilla
  • 1 cup prepared Vivian’s Live Again Vanilla Pudding
  • 4 cups high quality gluten free flour (for white flour I use Grandpa’s Kitchen, but any good GF flour blend will work)
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

    1. Cream shortening and sugar together for 1 minute.
    2. Add egg and vanilla and mix until smooth.
    3. Add pudding and mix on medium until smooth.
    4. Add remaining ingredients and mix for 1 minute. Dough should be just slightly sticky. If it’s too thick/crumbly, add additional pudding or dairy free milk 1 tablespoon at a time.
    5. Wrap the dough in plastic wrap or place in zipper bag and refrigerate until well chilled.
    6. Preheat oven to 350 degrees.
    7. Roll dough out to desired thickness (about 1/4″) on surface lightly dusted with gluten free flour.  Cut into desired shapes.
    8. Arrange cookies on  parchment lined baking sheet 1-2 inches apart.  Bake 8-10 minutes until they appear set and the bottom edges are just barely (just barely!) starting to turn a golden brown.
    9. Let cool on cookie sheet a few minutes before removing to a cooling rack. Frost with your favorite frosting and decorate as desired.

    Tips for Soft, Successful Sugar Cookie

    • Cream shortening and sugar very well before proceeding to next step.
    • For dairy free buttery flavor use butter flavor shortening.
    • Pudding keeps cookies soft and prevents a grainy texture.
    • Do not over bake! Cookies should be removed from the oven just before they look done.
    •  These are really good.  You might consider doubling the recipe.
    • If you accidently overbake- store unfrosted cookies in an airtight container with a slightly damp paper towel overnight.  They will be soft in the morning.
